This week's #WhatIsItWednesday is Florida Betony, also sometimes called Rattlesnake plant or Rattlesnake Weed. The botanical name is Stachys floridana. This plant is endemic to FL in its native range but has spread outside of it to other states. Many homeowners view it as a weed in their turf lawns. It spreads very easily through rhizome, making it tough to control.


We enjoy FL betony for its edible and pollinator attracting benefits. The entire plant is edible, but the roots are the best part. They look like the rattles of rattlesnakes and make a crisp addition to salads. You could compare the flavor and texture to radishes. The leaves can be eaten raw or dried and used for teas.
